Coffee + Coconut + Chia Seed Pudding

GF DF Vegan (Makes 2 medium jars)
1 cup of Black Chia Seeds
2 cups (1 tin) of organic coconut cream
1/3 cup of organic desiccated coconut
1 cup of plain BONSOY or activated Almond milk
2 tsp of SWEEP Powder 
1 tsp of pure vanilla paste
2 tbsp of rice malt syrup or 1 tbsp of raw honey 
1 shot of espresso coffee
IF you don't want coffee use cacao powder
 
Place chia seeds and desiccated coconut in a bowl.
In a separate bowl combine coconut cream, coffee shot, Bonsoy or almond milk, vanilla, rice malt syrup and whisk.
Add coconut and coffee blend to dry ingredients and stir well with a spoon.
Transfer equal portions into jars - leaving enough room for the chia to expand. Top with (any of the following) slices of banana, kiwi fruit, hemp seeds, coconut threads. 
Refrigerate for minimum of 4 hours (or over night)
**Take Superfeast Mushrooms? Add 1 tsp of TREMELLA or REISHI.
