SWEEP Nut Bar
(makes approximately 8 bars or 14 squares)
1 cup of raw Cashews roughly chopped
1 cup of raw Almond roughly chopped
1/3 cup of puffed Millet
1/2 cup of Pepitas toasted
1/2 cup of Sunflower Seeds toasted
1 tbsp Tahini or Raw Peanut Butter
1 generous tbsp of
1/4 cup of raisins or currants
1/2 sun-dried Cranberries
1/3 rice malt syrup or 1/4 cup of Honey
1 tsp of Cinnamon
1/3 cup of Coconut Oil
1 tbsp of Cacao Butter
Combine almonds and cashews, currants, cranberries, millet in a large bowl and mix through thoroughly.
Lightly toast sunflower and pepita seeds and set aside to cool.
Warm coconut oil, cacao butter, rice malt syrup, cinnamon and tahini in a saucepan and after blending, add to dry ingredients.
Mix ingredients thoroughly, place in a lined tray and press into a flat shape.
Sprinkle with toasted nuts, hemp seeds or coconut threads.
Refrigerate for 2 hours (minimum) then cut into squares.
